If you're playing in a league-specific format this year, I hope you have a while until your draft, because there are way too many players still unsigned.
Our method of handling the issue is that all unsigned players are available, but you get nothing if they don't sign in the American League. That's why below you'll see Manny Machado in the third round and Bryce Harper in the sixth. Other notable unsigned players were taken in the seventh (Craig Kimbrel), 10th (Dallas Keuchel to me), 14th (Marwin Gonzalez) and 19th rounds (Mike Moustakas).
What you have to decide is how much you're willing to risk in a league this deep. The stars' upside is incredible in this format, but getting nothing out of an early pick can absolutely sink your team.
That leads to the larger point in league-specific drafts -- you have to be more conscious of balancing upside with safety. The deeper a league is, the more likely a bust is to end your season early. This is especially true in a head-to-head league where you only need to be in sixth place come playoff time. This doesn't mean you should ignore upside, just make sure you target plenty of floor.
