Udoh (quadriceps) signed a contract with the Saints on Tuesday, Nick Underhill of NewOrleans.Football reports.
Udoh has spent the last five seasons with the Vikings, although he missed all but two games last year due to a quadriceps injury. Now healthy, he's expected to fill a reserve role at offensive tackle for New Orleans.

Udoh (quadriceps) suffered a season -ending injury against the Eagles on Thursday.
Udoh's season is over after he injured his quadriceps during the fourth quarter of Thursday's loss to the Eagles. The Vikings will now likely turn to David Quessenberry to start at left tackle until Christian Darrisaw (ankle) is healthy again.

Udoh exited Thursday's contest against the Eagles with a knee injury and won't return, Ben Goessling of the Minneapolis Star Tribune reports.
Udoh was hurt on a pass play early in the fourth quarter. He started the game over Christian Darrisaw, who is active but apparently only as an emergency option. As a result, David Quessenberry has taken over at left tackle.
